I think I have an obsession with making muffins…I thought about the recipes I’ve made over the past month and most are MUFFINS! What’s wrong with me?? Lol. I think it’s because they are easy to throw together but nonetheless I’ll still share because I know y’all like recipe inspiration AND recipes that you can feed your baby/toddler.
These muffins are grain free and sugar free! Made with almond butter and soaked dates. Soaked dates you say?? Why? In my current nutrition courses I learned a trick about soaking your dates for recipes. Especially making raw vegan recipes…soaking your dates will help them blend better in recipes.
I was inspired by Lilsipper this morning on Instagram! She shared a recipe for a 5 ingredient muffin and I didn’t have exactly what she had but I improvised and decided to use dates instead. These are again blender muffins because my Vitamix makes it so easy.
Makes 9 muffins
6 medjool dates (soaked for 1 hour min.)
1 tsp vanilla
3/4 cup Almond butter
1 tsp lemon juice
1/2 tsp baking powder
3/4 cup frozen berries (blueberries, raspberries etc.)
Soak your dates in a small bowl with water, for an hour or overnight (remove the seeds). Once your dates are soaked and you have removed the seeds, pre-heat your oven to 350 degrees F. Throw all of your ingredients in a high powered blender except for your berries. Blend everything for about 1 minute until your batter is smooth (make sure you no longer have chunks of dates). Add in your berries and gently fold them in. Spoon your muffin batter into a muffin tin (I like to use silicone muffin liners because it makes removing each muffin a lot easier). Cook for 20-25 mins. My muffins took about 23 mins.
These are perfect to freeze and perfect for your baby (6 months +) or toddler. No sugar added and grain free/gluten free!
