This is my favorite quick and easy lunch! Madeline loves chicken salad too! You could also look into subbing cranberries for grapes and/or adding chopped apples. This is really customizable. I like avocado oil mayo because it’s a heart healthy fat AND it’s a better option than those other brands that contain soy and/or canola oil. You can certainly make your own mayo at home or look for a clean brand at the grocery store. The main ingredients of a basic mayo are eggs, oil, lemon juice and salt/pepper. A clean brand shouldn’t have any preservatives, soy, corn etc. ❤

1 cooked rotisserie chicken, deboned and chopped (You can find this in your grocery store near the bakery)
1/2 cup Avocado Oil Mayo (I use Better Body Foods)
3/4 cup red seedless grapes, chopped
1 celery stalk, diced
3-4 tbsp red onion, diced
1/4 cup nuts, chopped (I used walnuts but sliced almonds would work great too)
1 tsp onion powder
1 tsp garlic powder
pinch of paprika
salt & pepper to taste
- Combine all ingredients into a bowl and mix well until combined.
- Store in a air tight container in the refrigerator for 3-5 days.
- Serve over a bed of lettuce/greens or you could make this into a sandwich or wrap.
