Avocado Banana Chia Pudding

IMG_2298.JPGThis Avocado Banana Chia Pudding was a hit with my 16 month old! This breakfast pudding can also be eaten as a snack throughout the day. This chia pudding is actually packed with heart healthy omega 3 and 6 fats. Healthy fats are essential for a young developing brain! If you are struggling with ideas on how to incorporate healthy fats into your baby or toddler’s diet this is IT! When feeding this to a baby (6-12 months), make sure to omit the honey or sub for maple syrup.

Chia seeds are nutrient dense and packed with energy boosting properties and antioxidants. Chia seeds and avocados are also a great source of Omega 3 fatty acids and fiber. Both are great for digestion and helping lower blood pressure and regulating cholesterol.

Ingredients:

1 cup non dairy milk

1/4 cup chia seeds (I use Better Body Foods brand)

1/2 ripe avocado

1/2 large ripe banana

1 tsp honey or maple syrup (optional)

Directions:

Blend all ingredients together for about 30 seconds in a high powered blender. If you don’t have one you can mash the banana and avocado together and then stir in the almond milk and chia seeds. Make sure everything is well combined in an air tight container. Store in the fridge overnight. Chia seeds “gel” when introduced to liquids so this is where that pudding like consistency comes from. Give it a good stir again in the morning before serving. Makes about 4 servings.
